sweet potatoes with brown sugar & coffee

INGREDIENTS:

6 sweet potatoes

 

sauce:

1 cup water

1/2 cup brown sugar

1/2 teaspoon instant coffee

1/2 teaspoon vanilla extract  (optional)

1/2 teaspoon salt

4 tablespoons butter (if you are on a heart-healthy diet, you can just substitute canola oil!)

Peel potatoes & place into a pot of salted water (the sweet potatoes will get spots very quickly when exposed to air, so place each potato into the pot of water immediately after peeling).

 

Cut potatoes into quarters lengthwise, & then slice each quarter into bite-sized chunks.

Place potatoes into pot of salted water until just covered with water.  Bring to a boil, & boil for about 5 or 6 minutes, or until tender but not mushy, & then drain.

In the meantime, in a separate small saucepan, heat 1 cup water with brown sugar, coffee, vanilla, salt.  Simmer the sauce for about 5 minutes, stirring occasionally, adding the butter near the end & allowing it to melt.

Pour sauce over the top of the potatoes, & stir gently.

1 cup water (for a slightly thicker sauce, add less water, 1/2 cup to 3/4 cups)

1/2 cup brown sugar

1/2 teaspoon instant coffee

1/2 teaspoon vanilla extract, if available

1/2 teaspoon salt

4 tablespoons butter (for a heart-healthier version, you can just use less butter or  substitute canola oil, or just omit completely!)

 

Peel potatoes & place into a pot of salted water.  (The sweet potatoes will get spots immediately when exposed to air, so place each potato into the pot of water immediately after peeling.)
