Here is a simple, delicious, & hearty soup for when the chilly weather comes around!
INGREDIENTS:
1 pound bag of dried split peas
2 onions
2 carrots, peeled & grated
4 cloves of garlic
1 to 2 tablespoons butter & a little bit of oil
salt
Peel & dice onions & garlic, then sautee in a tablespoon or two of heated oil until a little soft & starting to get a bit of golden color.
Add the grated carrot, split peas, & about 7 cups of water.
Cover, leaving the lid a bit ajar, & simmer~low boil for about 1-1/2 hours, or until peas are soft & the soup is a nice thick & creamy consistency (stirring occasionally during the cooking process). At the end, you may add more water to thin the soup, according to taste, or cook uncovered a bit if you would like to thicken the soup some more.
Add a teaspoon or 2 of butter, & salt to taste.
