cucumber salad with ginger & habanero pepper streamers

This is a delicious, fresh recipe with the coolness of the cucumbers contrasting with the spiciness of ginger & hot pepper…

Ingredients:
4 cucumbers
fresh ginger root
1 habanero (red hot!) pepper
4 tablespoons oil, salt to taste, & 2 teaspoons sugar

First, peel & slice the cukes thinly. If you don’t have a special slicer, just use a sharp knife to carefully slice the cukes.

You do not need much ginger at all for this recipe. When buying it, you can just break off a little nubbin of ginger & buy that…it will be plenty!
However, if you do have a longer piece of ginger, it is very pretty to make longer strips.
Cut a very thin cross-section of ginger, as long as possible, as shown above.
Carefully cut away the thin rim of skin. Then, cut long, thin slivers about 1-mm in thickness, like little matchsticks or even a bit longer & thinner, as shown below:

Cut about 10 to 15 strips.
Next, slice the pepper into very thin streamers. Because the pepper is curved, after you cut it in half, you may need to cut off a bit so you will have a straight edge. Then cut thin slivers, again maybe 10 or 15.

CAUTION: Wash your hands & equipment very well after handling this little beauty, & do not touch your face or children while cooking! My whole round self was red & irritated for many hours after. This is the queen of the hot peppers!
Also, you may want to try a tiny, tiny piece of the pepper to see just how hot it is…some people may like to mince it into tiny pieces & put just a few tiny pieces in, if it is a super-duper hot one! Some peppers are not quite as fiery, & the 10 or 15 streamers are perfect!
If you do not need the rest of the pepper, you can cut it into wedges & freeze to have on hand for future recipes needing extra heat!
To assemble the salad, add 4 tablespoons oil, 2 teaspoons sugar, and salt to taste to the cucumbers, & stir.

Sprinkle the ginger & habanero streamers on top of the salad!

GINGER TEA: You can wrap the leftover ginger well to save for another day, or make ginger tea out of it (here is a simple recipe: just peel & slice 1 to 2 inches of ginger root, then place in a pan with 4 cups of boiling water, cover, & allow to simmer for 10 minutes or so. Add sugar or honey to taste. Ginger tea is good for stomach upset, & has been used since ancient times for colds, flu, & sore throat!)
