This light & delicious dessert  is simply made using water, milk, sugar, flavoring, &  agar agar (derived from seaweed!), giving it a consistency somewhat related to a custard & jello.  

 

It is often flavored with almond or coconut flavoring, and then topped with fruit cocktail…it can also be topped with fresh seasonal fruit & a light sugar syrup for a cool & refreshing dessert!

  

I had previously tried almond dofu made from a mix, but wanted to prepare it from scratch this time.  For this recipe, agar flakes were used (Eden brand, sold at Whole Foods for about 7 dollars for 11 tablespoons per bag, enough for making this recipe 5 times!).

 

Using 2 tablespoons of agar flakes with 1-1/2 cups water + 2 cups milk yielded a medium custard-like consistency, which may be cut into cubes or diamond shapes… 

 

You can play with the proportions a bit & see whether you like yours a little firmer or softer…(The Eden brand agar agar package directions says to use 1 tablespoon agar for 1 cup liquid, but this yielded a dessert that was much too thick!)

INGREDIENTS

 

2 level tablespoons of agar agar flakes (Eden brand flakes found at Whole Foods.  NOTE:  Other types of agar agar  may require different proportions of agar agar to liquid.)

 

1-1/2 cups water

 

2 cups milk

 

5 tablespoons sugar

 

1-1/2 to 2 teaspoons almond extract or coconut extract, or to taste

 

 

 Topping:

 

1 can fruit cocktail 

 

OR

 

freshly sliced seasonal fruit  & homemade sugar syrup (made by heating 2 cups water & 1/2 cup sugar until sugar is dissolved, then refrigerating until nice & cool)

First, pour the 1-1/2 cups of water into a saucepan.   Sprinkle the 2 tablespoons of agar agar flakes onto the surface of the liquid & let sit a minute to soften.

 

Then heat the liquid on medium heat on the stove, while stirring with a whisk.  Bring to a true boil, & allow to low boil/simmer for at least 5 minutes, while whisking, until all of agar is completely dissolved.  Make sure to whisk well at the bottom of the pan too, because sometimes the agar likes to settle down there!

After the agar is completely dissolved, add the sugar & stir to dissolve, then add milk, & flavoring (almond or coconut).  Stir well until completely mixed in.

 …just pour into a shallow pan or baking dish & allow the mixture to solidify.  Once it cools down a bit, it can put into refrigerator to chill.  (The mixture will actually solidify at room temperature.)

Once it is solidified, cut into squares or diamond shapes, & transfer gently into a serving bowl or individual serving dishes.

The dofu is often topped with fruit cocktail &  plenty of  juice from the can!

AN INTERESTING NOTE ABOUT AGAR AGAR:  If the agar you are using yields a very different consistency from this recipe, the mixture can be reheated to boiling, & the agar can be stirred & mixed until is melts again, & it will re-solidify when cooled back down to room temperature.  So, for example, if it is much too thick, you can add more liquid & reheat & try again!  If the dessert is much too thin, it can be reheated to boiling & stirred until all the agar dissolves again, then just keep boiling until some of the liquid evaporates.  Once it cools back down again, it should be a thicker consistency!

2.     Heat liquid on the stove on medium heat while stirring with a whisk.  Bring to a low boil, & allow to low boil/simmer for 5 minutes, while whisking, until all of agar is completely dissolved.  Make sure to whisk well at the bottom of the pan too, because sometimes the agar likes to settle down there.  Add the sugar & mix to dissolve, then add milk & coconut or almond flavoring, & mix well with the whisk to incorporate.

 

3.     Then, simply pour the mixture into a shallow pan or baking dish & allow the mixture to solidify.  After it cools down, you then can refrigerate to chill.  (The mixture will solidify at room temperature.)

 

4.     Cut into squares or diamond shapes, & transfer gently into a serving bowl or individual serving dishes. 

 

 

5.     Top with fruit cocktail & juice from the can, or serve with fresh fruit with a chilled sugar syrup (made simply by heating 2 cups water with 1/2 cup sugar on low-to-medium heat until sugar melts, & then refrigerating until ice cold).  Just pour some of this syrup over the dofu & fresh fruit & that’s it!
