almond delight dessert (almond dofu!)

One day, we were travelling around, enjoying the sights, when we met up with this cool, light dessert: Almond Dofu!
This is a jello-like dessert with an almond flavor, perfect for summer weather!
It is actually made from agar agar (from seaweed!), instead of gelatin.
You can find recipes for this to make from scratch, but honestly, I use the premade packages–they can be found in the international aisle of a supermarket or otherwise in an Asian grocery store…it also comes in coconut & sometimes other flavors, as well!

INGREDIENTS:
1 package almond dofu
3-1/2 cups water *
1-1/2 cups milk (water can be substituted for milk, for a clear final product)
fresh or canned fruit (often served with canned fruit cocktail)
*TIP: sometimes I put a bit less liquid in than the package calls for, for a little firmer consistency, so when cutting the shapes at the end, they do not fall apart as easily!
Heat the water & the package contents to a boil, stirring constantly until dofu is dissolved.
TIP: I think it is very important that the contents actually boil & the powder is very well dissolved. I have had times when the dessert did not gel, & I think it was that I did not allow it to fully boil & really dissolve completely.
Stir carefully…
…oops! please don’t fall into the pan!
…or you will need a quick bath!
…then mix the water/dofu mixture with the milk, & pour into a shallow pan…
Allow to come to room temperature, & refrigerate until jelled…
When jelled, you can cut into diamond shapes by cutting diagonal lines about 1-1/2 inches apart, & then diagonal lines in the opposite directon! Carefully lift the diamonds & triangles out of the pan using a spatula. (Or, it can simply be cut into squares & gently scooped out into a serving bowl!)
If the pieces don’t hold together, that’s okay! It will still be delicious!
Add canned fruit cocktail & some juice from the can…
Or, cube fresh fruit…
…To go with the fresh fruit, you can make a light syrup ahead of time (heating 2 cups water with 1/2 cup sugar on low-to-medium heat until sugar melts, & then refrigerating until ice cold). Then, just pour some of this syrup over the dofu & fresh fruit for extra juciness!
I have always had almond dofu with canned fruit cocktail, which is very tasty with the syrup poured over the dessert for that extra juciness…
