sweet potato oven fries

Sweet potato fries! These fries are a little salty & spicy with a bit of crunchy sweetness…just delicious!
INGREDIENTS:
2 large sweet potatoes (or 4 small ones)
sea salt or regular salt
pepper & cayenne pepper
2 tablespoons canola oil
2 teaspoons brown sugar
First peel the potatoes…
Although they may look like belligerent elephant seals, as their name implies, they are really sweet!
Cut the potatoes in half, & then cut each half into fry-size wedges, maybe 4 to 8 wedges depending on the size of the potato. For these large ones, each half was cut into 8 wedges.
Place on a baking sheet with 1 to 2 tablespoons of canola oil, & stir to coat the potatoes. Sprinkle with salt, pepper, & a very light sprinkling of cayenne pepper for just a hint of spiciness. (Those in the photo above were just a bit too spicy!)
There should be some space between the fries, as shown above, so they will not get too mushy.
Bake at 425 degrees for 15 minutes, turning with a spatula every 5 minutes.
Then, take the cookie sheet out & sprinkle with 2 teaspoons of brown sugar, stir gently, & place back in the oven, baking the potatoes for 3 minutes, then turning with a spatula & baking 3 more final minutes.
The sugar will caramelize, giving the potatoes a little bit of a crispy coating!

First peel 2 large sweet potatoes or 3 or 4 small ones…(When you place them on a baking sheet, they should be in a single layer with a bit of space between the fries, so if you have a larger baking sheet, you may be able to bake more than this at once.)
