delicious mashed potatoes
These are a simple & delicious addition to any meal!
INGREDIENTS:
5 pounds of potatoes
2 heaping tablespoons sour cream
1 tablespoon butter
grated nutmeg
salt & pepper to taste
Peel & dice potatoes…then just cover with water…
These lovely little peels can go into the compost bin…good-bye until next year!
Cover the pot of potatoes & boil until very, very soft.
Pour out about three-quarters of the water or a bit more, leaving some water in the bottom of the pot.
Mash the potatoes. Because they are so soft and there is some water still in the pot, it should only take a minute or so to mash them. (If it looks like you will end up with soup instead of mashed potatoes, pour off a bit more water!) I like to leave some water in so the mashed potatoes are nice and moist. I leave them on the burner (very low heat) as I add the rest of the ingredients, & if there is still too much water, it will evaporate before too long, leaving the mashed potatoes just the right consistency!
Add the sour cream, butter, salt, & pepper to taste…if you are on a heart-healthy diet, feel free to omit the sour cream & butter…the potatoes will still be delicious!
Here is some nutmeg…so flavorful!
…& you can add just a little sprinkling of ground nutmeg.
Then just adjust the flavorings to your taste! That’s it!
