One day, as I was flying around the neighborhood in my space kayak, I met a visiting lady from Ghana, Western Africa! Her name was Pastor Cecilia, and she is a teacher at a girls’ school in Ghana…she was just here for a few days, visiting one of our neighbors.
We spent a pleasant afternoon, exchanging stories about our homes & childhoods far away. Before she left, Pastor Cecilia kindly gave me a beautiful, amazing Kente cloth…and told me of a recipe for avocado salad with groundnuts (peanuts)!
Here is the recipe…I must say, I have never tried the authentic version, which someone from Ghana has prepared, & I may not have gotten the exact proportions correct, so if you have ever had this recipe in its authentic form, please let me know!
AVOCADO SALAD with GROUNDNUTS (PEANUTS)
INGREDIENTS:
1 large avocado
juice of 1/2 a lemon
2 tablespoons peanuts
a light sprinkling of cinnamon
a sprinkling of cayenne pepper to taste
salt to taste
(finely sliced chives, optional)
First, peel and core the avocado, & then cut into cubes.
Sprinkle with lemon juice & gently stir. The lemon juice will keep the avocado bright green/yellow (so it will not get splotchy).

In the meantime, with a rolling pin, coarsely crush the peanuts…
Sprinkle the peanuts on top of the avocado, & then sprinkle with salt, cinnamon, & cayenne, & stir gently. Add more cinnamon & cayenne pepper to your taste…Garnish with cut chives if desired. Refrigerate until ready to eat…
