cool cucumber soup

This delicious soup is perfect for staying cool on a hot summer night!
INGREDIENTS:
2 cups plain yogurt, regular or nonfat
2 cups water
2 cucumbers, peeled & either grated or cubed into 1/2-inch cubes
3 cloves crushed garlic (or more to taste!)
salt & freshly ground black pepper
fresh dill or other fresh herbs

(My favorite conventional-type yogurt is Stonyfields Organic Yogurt-especially the cream-on-top when we need more energy!)
Stir all the ingredients for cucumber soup in a large bowl & adjust the taste of the salt, pepper, & garlic until delicious!
Traditionally, cucumber~yogurt soup calls for fresh dill, which is fragrant & has a beautiful feathery appearance…but today, I didn’t have any dill on hand, so I just used some cilantro, & fennel greens from the garden for a bit of added flavor and a similar kind of feathery green.
When the weather is sweltering hot like tonight, I like to add some ice cubes to the soup right before serving!
