fresh cantaloupe & strawberry fruit salad

INGREDIENTS:
1 canataloupe,
fresh strawberries,
sprigs of fresh mint,
& sugar to taste
(Note: 1 cantaloupe & 6 strawberries is enough for about 3 small dessert bowls.)
The cantaloupe is ripe if, underneath the criss-cross, ropish, tan pattern of the rind, you see a more of an orangey color instead of mostly green, and it starts to have a sweet aroma. If it is still on the green, very hard side, you can just leave it out on the counter for a day or two until it ripens!
First, cut the cantaloupe in half & scoop out the seeds with a roundish spoon. Next, with your melon ball scooper, you can scoop out the orangey fruit…
…or with a knife, first cut the cantaloupe into wedges, carefully removing the rind, & then slice into rectangles.
Then, hull and slice a handful of strawberries & mix with the cantaloupe balls.
You may add sugar to taste…if the cantaloupe is very sweet & juicy, you may not need any! A dash of balsamic vinegar can be delicious to add a little tartness!
Finally, garnish with beautifully green & fragrant mint sprigs. (Mint grows just like wildfire, so it is easy to plant in a container or garden to have on hand!)
This fruit salad is delicious served with small pita bread flying saucers, toasted & topped with a dab of butter…
